Fortified wine is wine that has had spirits added to it during fermentation. This kills the yeast and acts as a preservative, while raising the alcohol and sugar content of the final product.

Generally brandy is used as a fortification agent.

Dubonnet, blanc

A fortified wine beverage produced in France. It is made from fortified wine, spices and herbs, and quinine. It was heavily used as an aperitif earlier in the previous century.
